Cheese Steak Pie

Not for the diet conscious, a variation on two of my favorite fun foods, New York pizza and Philly cheese steak.

Update: For those that have requested or would like the recipe here it is,

A really nice thing about this recipe is that you may substitute just about anything you like as a filling. I learned to cook by watching my grandmother and she cooked like most grandmothers from what I have been told. A little of this, a little of that, a handful of. . . and cook. I’ll do the best I can with a recipe but please adjust and season to your taste.

Let’s start with a good pizza dough for the pie crust. If you have a favorite one of your own it will work just fine. If you don’t try this one, it has always worked well for me.

5 cups all purpose or baking flour
2 cups warm water
2 tablespoons instant dry yeast or one packet
2 tablespoons sugar
1 teaspoon salt

place the warm water in a small bowl.
Add yeast, sugar, salt.
allow to bubble for about ten minutes.

Sift flour in a large bowl
add about half of the water yeast salt and sugar mixture
mix by hand with a large spoon  adding water yeast and sugar mixture
until a large dough ball forms.
in another large bowl add a tablespoon of olive oil and coat inside of bowl with it.
place dough ball in oiled bowl
place another teaspoon of olive oil on dough ball and gently spread on surface of dough ball
place a kitchen towel over bowl containing dough  and allow to rest until dough doubles in size. (about two hours)

Flour a work area and turn dough onto the flowered area.
kneed dough 10-15 times with flowered hands to avoid sticking
divide dough into two equal parts and set aside.

Lightly coat the inside of a pyrex or other pie plate with cooking oil
take one section of the pizza dough and rolls out to 10 inches round
place this dough in the pie plate as you would any other pie crust.
roll out the remaining piece of dough to 10 inches round and set aside.

Next we prepare the filling:

Pan fry a pound or so of very thin sliced rib-eye steak. You may substitute any cut of beef you like but it must be sliced paper thin before cooking.
Pan fry 2-3 large white or yellow (or some of each) onions.
pan fry 1 large green pepper and one large sweet red pepper.
pan fry sliced mushrooms (any amount you like)

NOTE: you may add or subtract just about anything you like for the  filling

Place all of the fried items in the pie plate.
cover the above with mozzarella cheese, cheddar cheese and American cheese or any cheese you prefer that melts well.

cover the above with the remaining 10 inch round section of dough and crimp edges as you would any other pie crust.

Bake on middle rack of oven at 350-425 degrees F until crust is browned to your taste. Bottm crust will remain soft, if you prefer a crisp bottom crust you may pre brown bottom crust before adding filling. Average bake time is about 20 minutes.
